Lemony Black Truffle Vinaigrette

This. Stuff. Is. Amaze-balls.

Like so good, I want to pour it on everything...not even kidding!!!

This dressing pairs beautifully with just about any salad goodies you can think of...last night I tossed together baby spinach, field greens, apple, strawberries, a few olives and leftover balsamic grilled chicken...to die for yummy!

And please whatever you do, do not be put off by the black truffle oil...it may sound exotic and hard to find, but fear not...I've found it at HEB, Whole Foods, Trader Joe's and Fresh Market.

You can also get so creative with this dressing,,,try some fresh chopped thyme, oregano or rosemary (or a combo of all three), minced garlic or shallots are also fab add-ins.



1/4 cup Black Truffle Oil
3 tbsp Olive Oil
2 tbsp champagne (or sherry) vinegar
1/2 tsp lemon juice (fresh is best)
generous pinch kosher salt
 1/2 tsp fresh cracked pepper

In a cruet or jar with tight fitting lid, combine all ingredients shake...shake...shake until thoroughly combined. Taste for seasoning  and correct with more salt and pepper if desired.

Now make a salad and drizzle this heavenly vinaigrette all over it and enjoy!!!
